The longer version
Peak pricing splits the week into bands. Weekday evenings from about 17:00 to 22:00 and weekend mornings are peak. Weekday mornings and early afternoons are off-peak. The price of the same court differs by band, sometimes by a third or more.
The goal is not only more revenue at 19:00. It is moving flexible players, retirees, shift workers, and students, to 11:00 on a Wednesday where the court would otherwise sit empty. Done well, the quiet hours fill and the evening waitlist shrinks.
Mistakes: too many bands, so players cannot remember the price, and an off-peak discount so small nobody changes their habits. Start with two bands, look at occupancy by hour after a month, and adjust the boundary rather than the price.
